The body produces collagen more slowly as you age and stops producing elastin shortly after puberty. Because of the loss of these proteins, gravity starts to affect the shape of the skin, pulling down on it and causing the sagging due to less protein keeping the skin firm. Repetitive facial expressions also play a part in creating sagging jowls.
